The Chia Seeds is an amazing food. When you hydrate the seeds in water, the seeds shell opens up and absorbs up to nine times its volume in water. This then forms a gel, which is called Chia Seeds Gel. The gel is 90% soluble fiber, which may be beneficial for your digestive tract. Many people say that they use the seeds to support endurance when they are involved in sports or physical activities.

  • 1/3 cups chia seeds
  • 1 1/2 cups of coconut milk (or almond milk)
  • 2 tbsp of honey or coconut sugar
  • 1/2 tsp of vanilla
  • 1 tsp of cacao nibs (optional) 
  1. Combine all ingredients, except the toppings, in a blender or food processor. Or combine all ingredients in a jar, cover and shake vigorously. 
  2. Chill for at least 1 hour to let the chia seeds do their magic. They will expand and form a gel-like substance to make the pudding.
  3. Serve cold and top with your favorite toppings.
  4. You could also blend your fruits or cacao nibs together with the other ingredients.

I starting using Chia seeds to help with my LDL Cholesterol levels and have been hooked ever since. I put them on my salads and in my yogurt or cottage cheese. I order from HR store as much as possible because I can have confidence that everything has been tested for metals and pesticides. I don’t mind paying more to have that assurance.

Buckwheat Pancakes

Usually I will alternate 1 tsp chia with flaxseed (also HRS) in my morning smoothie. It's great to know it is completely clean.

But on special occasions when I want pancakes, I use chia to hold it together. Just soak a tablespoon of chia in three times the water in fridge for 15 minutes, and use instead of an egg. Use only buckwheat flour, so no gluten, add a bit of apple cider vinegar and xylitol and cook like normal. Harvest some kale or chard from your garden and steam it for the topping. You can use maple syrup, but I will sometimes cream bananas and berries for the top. It is so delicious that you are forced to eat it mindfully and slowly !!!
