Directions

Instructions:

  1. Combine the quinoa and water in a medium pot. Bring to a boil, cover and reduce the heat. Let it simmer for 15 minutes.
  2. Remove from heat and scoop it into a salad bowl. Let it cool while preparing the other ingredients.
  3. Chop up the vegetables. Mix into the quinoa.
  4. Whisk the dressing ingredients together.
  5. Drizzle over the mixture and toss.
  6. Refrigerate. Enjoy while chilled.

Recipe

Ingredients:

  • 3/4 cup Health Ranger Select Organic Tri-color Quinoa, (rinsed)
  • 1.5 cup water
  • 1 can unsalted organic black beans, (drained and rinsed)
  • 1 cup frozen/thawed organic corn
  • 1/2 medium-sized, organic red bell pepper, (seeded and chopped)
  • 1 cup Health Ranger Select Organic Freeze-Dried Mango Pieces
  • 1/4 cup organic onion, (finely chopped)
  • ⅓ cup organic cilantro (chopped)
  • Optional: Avocado

Dressing:

  • 3 Tbsp. organic extra-virgin olive oil
  • 2 Tbsp. fresh organic lime juice
  • 1 tsp. Health Ranger Select Premium Raw Manuka Honey MGO 514+
  • 2 tsp. organic chili powder
  • ½ tsp. ground organic cumin
  • 1 tsp. Health Ranger Select Pink Himalayan Salt (Fine Ground)
  • 1/4 tsp. Health Ranger Organic Ground Black Pepper

Goes with any meal

We have purchased Quinoa several times to eat now and shelf storage. We prepare Quinoa in our Instant Pot along with adding Ranger Yellow Miso to it as a base instead of just plain water. Also we rinse and soak our Quinoa with filtered water- always. We soak the Quinoa at least 8-12 hours for best results. One cup dry turns into 2 cups after soaking. Love the Health Ranger. Excellent Quinoa

I have tried to cook quinoa before, but it always came out hard and/or crunchy. Health Ranger quinoa cooks up like rice. It is soft and has a delicious nutty taste! I steamed it in a rice cooker, then made stuffed green peppers. Excellent!
