Cozy up this Fall: 3 Nourishing Soups made with simple, organic ingredients

As the leaves turn golden and the evenings grow brisk, kitchens everywhere fill with the aromas of simmering pots and hearty meals. There’s something timeless about soup – it warms the hands, soothes the spirit, and transforms the humblest ingredients into something extraordinary.

This season, we’re shining a spotlight on a few pantry staples that pack incredible flavor and versatility: organic amaranth, purple barley flakes, red lentils, freeze-dried vegetables and rich powders like tomato, miso and bone broth. These shelf-stable ingredients from the Health Ranger Store make it easy to whip up bowls of comfort whenever the mood strikes – no farmers’ market run required.

So grab your favorite mug or soup bowl, because we’ve gathered three wholesome recipes that celebrate the essence of fall, featuring hearty grains, creamy tomato comfort, and miso’s savory magic.

Golden Amaranth & Red Lentil Stew

If cozy had a flavor, this soup would be it. Amaranth, an ancient grain with a nutty taste, pairs beautifully with protein-rich red lentils. Together, they create a stew that’s earthy, satisfying, and layered with warming spices.

Amaranth not only contains protein but is also packed with fiber and essential minerals like manganese, magnesium, phosphorus, iron, selenium, and copper. [1] Red lentils, meanwhile, are a good source of B vitamins, which are required for converting food into usable energy, as well as complex carbohydrates that provide sustained energy. [2]

Fall is the perfect time to load up on these nutrients because your body’s energy needs increase as the weather gets colder. As it performs heat-generating activities (which require energy) to keep you warm, you’ll inevitably feel hungrier and crave comfort foods. [3]

Amaranth and red lentils are two of the best healthy alternatives to the calorie-rich foods your body is bound to crave. [4] Rich in nutrients that support your body’s energy needs, their high fiber and protein content can also keep you feeling full for longer, helping you avoid overeating and excess calories.

Ingredients

½ cup Health Ranger Select Organic Amaranth

½ cup Health Ranger Select Organic Red Lentils

1 small onion, chopped

2 cloves garlic, minced

1 medium carrot, diced

1 tsp turmeric

½ tsp ground cumin

4 cups Groovy Bee® Organic Powdered Chicken Bone Broth, prepared (or water, for a lighter base)

Health Ranger Select Pink Himalayan Salt and black pepper, to taste

Fresh parsley or cilantro, for garnish

Instructions

1.     In a heavy pot, sauté onion, garlic, and carrot until soft and fragrant. Stir in turmeric and cumin, letting the spices bloom for 30 seconds.

2.     Add amaranth, lentils, and your choice of prepared chicken bone broth or water. Bring to a boil, then reduce to a gentle simmer.

3.     Cook for 25–30 minutes, stirring occasionally, until the lentils break down and the stew thickens.

4.     Season generously, then ladle into bowls and finish with fresh herbs.

Serving tip: Pair this stew with crusty whole-grain bread or roasted root vegetables for the ultimate autumn dinner.

Creamy Tomato Comfort Soup

Some recipes never go out of style, and tomato soup is one of them. This version takes a modern approach, blending organic tomato powder with non-fat milk powder for a smooth, velvety base – no canned tomatoes required. It’s rich yet light, familiar yet elevated.

For many, a warm bowl of tomato soup is the ultimate comfort food during chilly autumn months. Tomatoes provide protein, fiber, and vitamins A, C, and K – important nutrients for supporting your body’s natural defenses. [5]

What makes tomato soup truly comforting is the unique blend of folate (B9), magnesium, vitamin B6, iron, and tryptophan (an essential amino acid) it provides as it warms your belly. These nutrients are involved in processes that can naturally uplift your mood. [6]

The addition of non-fat milk transforms tomato soup into a creamier, healthier, and heartier dish. A rich source of high-quality protein and essential micronutrients like calcium, phosphorus, potassium, and vitamins A, D, and K2, non-fat milk makes tomato soup more nutritious and certainly more filling!

Ingredients

3 tbsp Health Ranger Select Organic Tomato Powder

2 tbsp Groovy Bee® Organic Non-Fat Milk Powder (also available in #10 cans at the Health Ranger Store)

1 small onion, diced

1 clove garlic, minced

3 cups Groovy Bee® Organic Powdered Chicken Bone Broth, prepared (or water, for a lighter take)

1 tbsp olive oil

Health Ranger Select Pink Himalayan Salt and black pepper, to taste

Instructions

1.     Sauté onion and garlic in olive oil until golden and fragrant.

2.     Transfer to a blender with tomato powder, milk powder, and 1 cup prepared chicken bone broth (or water). Blend until smooth.

3.     Pour the mixture back into the pot, add the remaining bone broth, and simmer for 10 minutes.

4.     Season with salt and pepper, adjusting to taste.

Serving tip: Garnish with fresh basil leaves, homemade croutons, or a drizzle of olive oil. Serve alongside a warm grilled cheese sandwich for a nostalgic, heartwarming meal.

Miso Corn & Pea Soup

Simple, quick, and packed with flavor, this soup is perfect when you want something light yet deeply satisfying. Freeze-dried corn and peas add natural sweetness, while yellow miso powder delivers comforting umami depth.

Corn is a well-known energy-giving food, offering plenty of complex carbohydrates. Unlike simple carbs, complex carbs are digested more slowly by the body, making them more filling. Eating corn not only leaves you feeling full for longer, but it also provides long-lasting energy – perfect for sustaining your body this fall! [7][8]

Corn contains protein and plenty of insoluble fiber – a type of complex carb that’s good for digestion and feeds friendly gut bacteria. [9] It also provides vitamins B3, B5, B6, and B9, potassium, and a generous assortment of potent antioxidants that support overall health. [10]

Like corn, peas are another filling, energy-giving food that’s great for the fall season. They contain high amounts of complex carbs and are a good source of high-quality plant protein. Peas also provide iron, zinc, magnesium, potassium, calcium, vitamins A, C, and E, and loads of protective antioxidants. [11]

Ingredients

1 tbsp Health Ranger Select Freeze-Dried Organic Yellow Miso Powder (also available in our Easy PEAsy Miso Soup Kit)

2 tbsp Health Ranger Select Freeze-Dried Organic Whole Corn (also available in storable #10 cans)

2 tbsp Health Ranger Select Freeze-Dried Organic Peas (also available in storable #10 cans)

3 cups Groovy Bee® Organic Powdered Chicken Bone Broth, prepared (or water, if you prefer a gentler flavor)

½ tsp fresh grated ginger (optional)

1 green onion, thinly sliced

Health Ranger Select Pink Himalayan Salt and black pepper, to taste

Instructions

1.     Bring prepared chicken bone broth (or water) to a gentle simmer and whisk in miso powder.

2.     Add freeze-dried corn and peas and grated ginger. Simmer for 5–7 minutes until rehydrated and flavorful.

3.     Ladle into bowls and garnish with green onion.

Serving tip: Pair this with a simple grain bowl or a side of steamed dumplings for a nourishing lunch or light supper.
