Ingredients
For the base:
1 ½ cups organic almonds soaked overnight and drained
½ cup desiccated coconut
10 dried apricots
1 lime, zested
A pinch of sea salt
½ tablespoon water
For the filling:
2 ½ cups raw cashews soaked for 2 hours and drained
½ cup coconut cream
2 lemons (you’ll need both juice and zest; reserve some zest for topping)
4 limes (both juice and zest; reserve some zest for topping)
3 Tablespoons organic lucuma powder
4 Tablespoons coconut nectar
A pinch of sea salt
¾ cups extra virgin coconut oil
Directions
1. Line the cake tin with baking paper (cut to fit).
2. Add all the dry base ingredients in a blender and blend until fine. Add water if needed to make the mixture stick together. It should stick to your fingers when you squeeze a bit.
3. Pour the mixture into your cake tin and flatten with the palm of your hand before placing it in the freezer.
4. Combine all the filling ingredients except the coconut oil and blend until silky smooth, then add the coconut oil (melted) and blend again until completely mixed. Taste the mixture and adjust to your preferred sweetness using the coconut nectar.
5. Take the base out of the freezer and pour the filling over it. Smooth down the filling with a spatula then pop it back into the freezer and allow it to set overnight.
6. In the morning, remove from the freezer and top with your reserved zest, then slice and serve. Enjoy!
Dairy-free Lucuma ice cream

350 g unroasted organic cashews, soaked

85 g raw honey
